A new era is Starting for PrestaShop.
PrestaShop 8.0.1 version is out from 6 of Jan 2023.
Version 8.0.1 is not a Beta version.
PrestaShop 1.7.8.8 is on extended support, the version 1.7.8.8 came out on 8 Dec 2022
This means that PrestaShop 1.7 developing is stoping, they will only support it for critical security issues and bugs.
The are focusing on PrestaShop 8! And just to show there determination version 8.1 Beta is out for feedback

Should I upgrade?
I have personally tested PrestaShop 8.0.1 and it still needs work.
At the current moment I am writting this I did not tried the 8.1 Beta
They are working fast, I mean really fast. They are putting all the effords to the brand new 8!
But. No I would not migrate to 8 yet. I would wait for a few major releases and then migrate to it!
I will let you know when I beleive it is time!
The good news are that migrating from 1.7.8 to 8 is easy!
